To survive the polar vortex of freezing weather with this Artic blast that is happening to most of the country this week, I have a perfect solution for breakfast. Now is a great time to make my gingerbread waffles recipe. These are so easy and puffy waffles with just enough gingerbread flavor from the spices and molasses that gives them even more taste appeal.
Homemade waffles are so much cheaper than buying those wimpy commercial versions in your grocer’s freezer case. Making waffles from scratch does dirty up more dishes, the waffle iron and more utensils than pulling them out of a cardboard box, but you can’t compare how much you’ll save and that incredible taste. You also can make these ahead to save yourself work later.
This recipe will make enough that you can store in the refrigerator and then later pop into your toaster for additional breakfasts or snacks. You can even reheat these in your microwave for a one or two minutes, depending on how many you reheat.
When I serve my waffles recipe, I trade off between just dusting with some confectioners’ sugar and pouring on pancake syrup. Other times, I melt some butter before sprinkling the confectioners’ sugar. It just depends on my mood and what I feel like doing. All these options taste equally delicious.
You can just add the eggs into the batter without separating them, but folding the beaten egg whites into my waffles recipe produces a lighter, higher waffle than just beating the eggs straight into the batter. It might be a little extra work, but you do produce a better quality waffle.
Another excellent homemade waffle that I make is for my Orange Waffles. These are so delicious as well with that twist of orange.
Gingerbread Waffles
5 cups of flour
5 tablespoons of sugar
1 teaspoon of salt
7 teaspoons of baking powder, leveled
5 eggs, separated
4 -1/4 cups of milk
9 tablespoons oil + 1 teaspoon to lube your waffle iron
½ cups of molasses
2 teaspoons of cinnamon
½ teaspoons of ground ginger
1/4 teaspoon of nutmeg
½ teaspoons of ground cloves
1 tablespoon of vanilla
Sift the dry ingredients together in a large mixing bowl.
Separate the eggs.
Add the egg yolks, milk, molasses, vanilla, and oil to the dry ingredients. Beat these ingredients with a whisk until smooth.
Fold in stiffly beaten egg whites last just to incorporate into your waffle batter.
I use a silicone brush to spread the teaspoon of oil inside my waffle iron.
Allow your waffle iron to heat and then start frying.
Keep frying your waffles until you finish the batter.

I have to admit that a homemade waffle is a 100 times better than from a box. I like waffles but have never bought a waffle iron. But my sister in law has one and she might make these so I will share with her. If she makes she will share with me.

You need a waffle iron. I use that thing all the time. It really helps making a batch ahead for reheating later.
