Best Orange Cake Recipe With Raisins

orange raisin cake

If you’re hungry for cake and want to taste something delicious, hardly any work and keeps well, then I have the perfect recipe for you with my best orange raisin cake recipe. Unlike a typical raisin spice cake, this one has the help of oranges and coconut flakes adding a bright tang as well as tropical sweetness. The ingredients together play off the raisins and spices in a sensational new way for a different change. Though you can enjoy this cake plain, I always finish it off with a simple powdered sugar icing with vanilla or with a bit of grated orange rind.

This orange raisin cake recipe doesn’t involve the need to cream your butter, margarine or shortening. I use canola oil and just add it after boiling my raisins to plump them up. However, I have also made this recipe with butter and margarine by simply melting them when boiling my raisins. Either choice produces the same beautiful and moist sheet cake.

Basically, you just will be boiling the raisins, then mixing the other ingredients together. The only real work involved is grating your oranges. Those that don’t have any oranges on hand can always substitute with orange extract.

You also might want to try another great raisin sheet cake that I make with my Spanish bar cake recipe.

Orange Raisin Cake

2 cups of raisins
4 cups of water
1-1/2 cups of flaked coconut
1 cup of canola oil
grated rind of three cleaned oranges or 1-1/2 teaspoons of orange extract
2 teaspoons of ground cloves
1 teaspoon of ground cinnamon
3/4 teaspoon of ground nutmeg
½ teaspoons of salt
4 cups of flour
1-3/4 cups of sugar
2 teaspoons of baking soda, leveled
2 large eggs
your favorite confectioners’ sugar icing

Add the water to the raisins and boil steadily for 10 minutes. Keep the lid on your pot to prevent the liquid from overly evaporating.

Next, add oil and let the boiled mixture cool.

Sift flour, sugar, soda, salt, orange rind, grated coconut flakes, and spices in your mixing bowl.

Add cooled raisin mixture to the sifted dry ingredients and combine well.

Now add the eggs, one at a time and mix it. (I don’t bother using my electric mixer for this, but you can if this is easier for you. I just stir with my whisk to save an extra step of washing the beaters that I will need to make my creamy icing).

This is a thinner batter so do not be alarmed.

Grease a 13″ x 9″ pan and bake in a 350-degree oven for about 35-40 minutes, depending on how your oven is regulated. Test with a toothpick or slender knife to see if anything sticks.

Frost with your favorite white icing once the cake completely cools.

ENJOY!
