Meatless Sandwich Spread

 

If you want a tasty and inexpensive meatless replacement for your sandwich, I have a meatless sandwich spread recipe that you need to try. The one that I have for you today is with great Northern beans, lemon juice, garlic, ground cumin powder, olive oil, and peanut butter. You may think that this mix of ingredients sounds like an odd combination, but the amount of peanut butter to the beans along with these particular spices gives a wonderful flavor with a hint of nuts that may pleasantly come as a surprise.

Though you could use canned beans, I always just soak the dry variety overnight. The next day I cook them until softened and then take out my food processor to whip up this bean sandwich spread recipe.

Making this meatless sandwich spread couldn’t be easier since you only have to peel a clove of garlic and measure out the ingredients before grabbing your canned or cooked, drained beans and the food processor to give it a few whirls. Afterwards, you just scoop it up into your covered dish and refrigerate until ready to serve.

I make several different ones from beans that are delicious for sandwich fillings, dips to using as a pasta sauce. Another delicious bean sandwich spread that I make uses cream cheese or the lower-fat neufchatel cheese and some roasted red pepper.

I love cooking with beans because they are inexpensive and can help stretch your food budget. Besides, they are healthier than meat for the heart and waistline. Furthermore, you can make a lot of different dishes such as black bean lasagna, never-fried refried beans and homemade flour tortillas, a bean and rice dish, etc. or boosting nutrition in casseroles.

When you are running out of ideas for lunch, try this meatless sandwich spread.  I think that you just might love it.

Meatless Sandwich Spread Recipe

 

2 cups of cooked, drained Great Northern beans or 1 can (15 oz. or 19 oz.)
2 tablespoons of creamy peanut butter + 1 teaspoon, level
3 tablespoons of lemon juice (fresh or reconstituted)
½ teaspoons of ground cumin powder
1 clove of garlic, finely chopped
1/4 cup of olive oil
1/4 teaspoon of cayenne
3/4 teaspoon of salt

 

Take out your food processor and add the cooked beans or your can of beans, peanut butter, lemon juice, cumin powder, garlic, cayenne pepper, and salt. Give the ingredients a few pulses to combine and then while your food processor is running, slowly add the olive oil to the mixture. Process the ingredients until your meatless sandwich spread is smooth.

Preparing this spread can take as little as 10 minutes if you are using canned beans over the dried beans that need to be soaked overnight.
