You may think that this mix of ingredients sounds like an odd combination, but the amount of peanut butter to the beans along with these particular spices gives a wonderful flavor with a hint of nuts that may pleasantly come as a surprise.
Though you could use canned beans, I always just soak the dry variety overnight. The next day I cook them until softened and then take out my food processor to whip up this bean sandwich spread recipe.
Making this vegan sandwich spread couldn’t be easier since you only have to peel a clove of garlic and measure out the ingredients before grabbing your canned or cooked, drained beans and the food processor to give it a few whirls. 2 cups of cooked, drained Great Northern beans or 1 can (15 oz. or 19 oz.)
2 tablespoons of creamy peanut butter + 1 teaspoon, level
3 tablespoons of lemon juice (fresh or reconstituted)
½ teaspoons of ground cumin powder
1 clove of garlic, finely chopped
1/4 cup of olive oil
1/4 teaspoon of cayenne
3/4 teaspoon of salt
Take out your food processor and add the cooked beans or your can of beans, peanut butter, lemon juice, cumin powder, garlic, cayenne pepper, and salt. Give the ingredients a few pulses to combine and then while your food processor is running, slowly add the olive oil to the mixture. Process the ingredients until your meatless sandwich spread is smooth.
