
A summer staple that is popular at our house is my favorite recipe for potato salad. I usually serve my ranch potato salad recipe for family picnics, especially for holidays like Memorial Day or a great side dish option for easy warm weather dinners. My recipe is a bit different than the standard one with mayonnaise, yellow mustard and vinegar. I found that adding plain salad dressing like Miracle Whip along with ranch salad dressing to the cooked potatoes, hard-boiled eggs, diced celery and onion, thinned further with just a little milk and accented with basil, salt, and pepper make a delicious variation.
I only use a teaspoon of salt to minimize the amount of sodium. Feel free to sprinkle more on to suit your taste. Sometimes, I also add some green olives if I have a jar in the house. They contribute beautiful color and taste.

Ranch Potato Salad
7 cups of cooked, diced potatoes
1 teaspoon of salt
1 medium onion, finely chopped
1 cup of celery, finely chopped
1 cup of salad dressing like Miracle Whip
1/3 cup of ranch dressing
½ teaspoons of dried basil or 1 tablespoon of fresh basil, finely chopped
½ teaspoons of black pepper
1/4 of milk to moisten
5 hard-boiled eggs, diced
1/4 cup of sliced, stuffed green olives (optional)
Mix Miracle Whip dressing, ranch dressing, salt, pepper, basil, milk, hard-boiled eggs, diced cooked potatoes, chopped onions, and celery in a large mixing bowl.
Chill in a covered container for a few hours before serving.
If the potato salad appears a bit dry, add more milk to moisten.
