As I explained many times, I am a lazy cook and baker. However, this fact never stops me from making some delicious recipes like these easy drop cookies that you got to taste to believe. It will probably shock you to know that these beauties use a minimum of ingredients that include oil and well as no electric mixer to make, which is really fantastic for when you want great cookies in a hurry without the usual hassle.

These cookies remind me of the taste of a spritz or sugar cookie that goes through a cookie press only my recipe has more flour, more vanilla, lemon juice, and baking powder to the eggs, sugar and oil. This recipe makes a raised, softer but not cake-like or hard one as a typical crisp cookie. Instead, imagine a yummy vanilla mound with a slight lemon alteration from a teaspoon of lemon juice in a delectable cookie that is between soft and firm, but more in between when thinking of its texture.

Easy Drop Cookies

2 large eggs
2/3 cup of canola oil
1 teaspoon of lemon juice
2 teaspoons of vanilla extract
3/4 cup of sugar
3 ½ cups of flour
2 teaspoons of baking powder, leveled
½ teaspoons of salt

Beat two eggs with a fork or whisk in your mixing bowl.

Stir in the oil, vanilla and lemon juice next.

Blend in the sugar and stir into the mixture until it thickens.

Sift together: the flour, baking powder and salt.

Stir into the oil mixture and combine all the ingredients until well mixed.

Drop by teaspoons onto ungreased cookie sheets. These cookies don’t really spread and puff up instead.

Bake in a 350-degree oven for about 10-12 minutes, depending on how your oven is regulated. These drop cookies are pale cookies, but the bottoms will be slightly browned around the edges and bottom.

Test with a cake tester or toothpick if you’re not sure to test for doneness.

Remove from the cookie sheet immediately.
