Cherry Scones With Candied Cherries Are a Delicious Indulgence

My cherry scones are really delicious using candied cherries to indulge your sweet tooth without hating yourself later for overdoing the sugar and shortening. In fact, scones are one of my favorites and easiest things to bake when the family wants a sweet treat. What I love about these tasty quick breads is all the freedom that you have to create the type to accompany a meal in place of a roll or bread such as my cheddar scones as well as a dessert or snack substitute.

When making my cherry scones, I do want to stress that it is important not to overwork your dough. You just want to incorporate the ingredients because handling the dough too much leads to a tough scone.

Another thing I want to add is when baking is not to trust using a regular teaspoon or tablespoon to measure out your baking powder or a baking soda. Always use a measuring spoon and level it because too much of those can backfire for baking. This is especially true when baking a cake since it can make it rise quickly, only to later collapse like a deflated balloon. Overloading the baking powder also can change the texture of your crumb to a coarse one while too much baking soda can also give it a bad taste.

To save yourself time, I’ll tell you what else I do to speed up my baking. After I pour my oil in for my recipe, I turn the measuring cup upside down to grease my baking sheet. Later, I just use the cup to measure out my water for my cherry scones.

Cherry Scones

2 ½ cups sifted flour
2 ½ teaspoons baking powder, leveled
½ teaspoons salt
1/3 cup sugar
1/3 cup canola oil
1 cup or 8-oz. container of candied cherries
1 large egg
½ cup water

In a large mixing bowl, sift the flour, leveled baking powder, salt, and sugar.

Make a well in the center of the dry ingredients to drop in your egg, oil and water.

Use a wooden spoon and stir in the ingredients to gently incorporate them.

I add the candied cherries last and mix through my dough.

You can turn this dough on a lightly floured surface and cut into squares or triangular pieces. Another option is just rolling into balls in any size that you want before placing them on a greased baking pan or cookie sheet.

Being a lazy baker, I have another trick to share with you. When rolling the cherry scones into balls and noticing your hands are getting sticky, I head to the greased pan and place my hands into it for lubrication.

Bake in a 350-degree oven for about 15 minutes or until the bottoms are slightly browned.
