
When you think of caraway seed bread, your first thought may be a rye or white yeast bread or something like an Irish soda bread. However, this bread is a quick bread without baking soda that has more of a sweet cake like than a biscuit texture.
Another wonderful quality to this caraway bread recipe is how easy it is to throw together. You just gather up all the ingredients, sift the flour, crack the eggs and mix with a fork or your wooden spoon until all the ingredients are combined. I use oil instead of butter, shortening or margarine, which definitely makes a big difference to speed this bread making along.

Caraway Seed Bread
1 ½ cups sifted flour
1 tablespoon of baking powder, leveled
1/4 cup plus 1 tablespoon of sugar
1/3 cup of canola oil
½ cups of milk
2 large eggs
2 teaspoons of caraway seeds
1/4 teaspoon of salt
Place the sifted flour, baking powder, salt, and sugar in a mixing bowl and stir with a fork to mix through.
Next, add the eggs, milk, oil, and caraway seeds to the flour mixture, stirring into the dry ingredients just until they are moistened and well combined.
Spread into a greased 9 x 13″ baking pan or a 9-inch square.
Bake at 350-degree oven for 25-30 minutes if using a 9-inch square and 20-25 minutes for the 9 x 13″ pan, depending on how your oven is regulated. Test for doneness with a toothpick, slender knife or cake tester to see if anything sticks.
Allow to cool in the pan for about 10 minutes before removing or cutting it.
