  • For the best results, I found it matters to always level baking powder and baking soda when baking. The amount of this type of leavening agent matters because too much or not enough of it is often the reason for a bad cake.
  • Also, baking powder does expire. Before you begin baking, check the expiration date on the can. Perhaps, your baking powder container lacks an expiration date or you forgot when you purchased it. Therefore, you might want to do this simple test recommended by Michigan State University of taking one teaspoon of that baking powder and mixing it with one-third cup of warm water. If you see the mixture bubbling in the water, then the baking powder is still good for use.

Chocolate Marble Snack Cake with Walnuts

1-1/4 cup sifted flour
2/3 cup of sugar
3/4 cup of milk
1/3 cup of canola oil
2 teaspoons of vanilla
1/4 cup of unsweetened cocoa
1/3 cup of chopped walnuts
1 ½ teaspoons of baking powder, leveled
confectioners’ sugar (for dusting the top)
2 large eggs

Mix together the flour, sugar and baking powder.

Add the milk and oil with a whisk or electric mixer until well combined.

Now add the eggs, one at a time and incorporate into the mixture.

In a separate mixing bowl, place the walnuts and cocoa together and mix until well blended.

Pour about 3/4 cup of the batter into a well-greased square 8×8-inch pan or 9x9x2-inch size.

Layer the nut mixture over the top of that poured batter and gently stir to create a marbled effect.

Bake in a 350-degree oven for about 20 minutes if using the square 8×8-inch pan and slightly less time (about 17 minutes for the larger 9x9x2-inch pan). Baking time depends also on how your oven is regulated.

Test with a toothpick, slender knife or cake tester for determining doneness.

Cool about five minutes before sprinkling with confectioners’ sugar for the topping.
