Pancakes are scrumptious, but they usually aren’t a great source of protein. However, these delicious banana cinnamon protein pancakes are fortified with extra protein from cottage cheese, egg, almond milk, and whey protein powder with just enough sweetness from a ripe banana. Furthermore, this healthy pancake recipe cooks up light and fluffy besides being very filling for a better breakfast option. Since my family loved them so much, I wanted to make sure that you also got my recipe.

Why You’ll Flip Over These Healthy Pancakes

First of all, there is no sugar in this recipe. All the sweetness comes from the ripe banana.

Secondly, there is no salt. You do not need salt in these cottage cheese pancakes for this recipe to work and taste awesome.

In addition, there are four sources of protein in this one breakfast meal. You have the cottage cheese, whey protein powder, almond milk, and the egg.

These pancakes are easy to make. You won’t need to pull out a blender, but just use a fork to mash the banana before mixing all the ingredients to get ready to pour into your hot skillet.

Finally, these protein pancakes with a banana also have cinnamon, which is wonderful for its antioxidants and antibacterial properties. This health benefit is especially important to help lower cholesterol and lower blood glucose levels.

Banana Cinnamon Protein Pancakes

1 cup of sifted flour + 2 tablespoons
1 teaspoon of baking powder, leveled
3/4 cup of almond milk
1/4 cup of whey protein powder
½ teaspoons of ground cinnamon
½ cups of creamy cottage cheese (low-fat or regular)
1 large egg
1 ripe medium banana
2 tablespoons of canola oil

Mix together the sifted flour, baking powder, whey protein powder, and cinnamon.

In a larger mixing bowl, mash the banana with a fork. Then add the cottage cheese, egg and almond milk and mix until well combined.

Let the batter rest for about five minutes.

Heat your skillet with the oil.

Then add the batter using a large spoon or using about one-fourth cup for each.

Cook until the pancakes set around the edges. This will be about two minutes or so. The bottoms will be golden brown. Then flip and cook the other side.

Serve with fresh fruit, applesauce or maple syrup.
