This recipe is fortified with crushed bran flakes and oats with a crunchy nut and bran topping that makes it quite satisfying as well. Here is how to make this one-bowl bran and oat coffee cake because it is a wonderful change from a bowl of cereal for breakfast.

Something else that makes this moist coffee cake recipe dear to my heart is how easy this fiber-rich coffee cake is to make. The hardest part is getting out your rolling pin and crushing bran flakes for the cake and more for the topping. Everything else is just stirring with your wooden spoon before pouring into your well-greased pan.

Hearty Bran and Oat Breakfast Coffee Cut, Uncut

Healthy Bran and Oat Breakfast Coffee Cake with Nutty Topping

1 large egg
1/4 cup of canola oil
2/3 cups of milk + 2 tablespoons
½ cups of sifted flour
½ cups of quick oats
1 cup of crushed bran flakes
1/4 cup of sugar
2 teaspoons of baking powder, leveled
1 teaspoon of vanilla

Crunchy Breakfast Coffee Cake Topping:

2 tablespoons of softened butter
2 tablespoons of brown sugar
½ cups of crushed bran flakes
1/4 cup of chopped walnuts

  1. In a large mixing bowl, add the ingredients and stir with a wooden spoon or your electric mixer if you prefer.
  2. Pour into a well-greased square 8×8-inch pan or 9x9x2-inch size.
  3. Add the crunchy coffee cake topping evenly over the top.
  4. Bake in a 350-degree oven for about twenty minutes, depending on how your oven is regulated.
  5. Test with a toothpick, cake tester or slender knife for determining doneness.
  6. To Prepare the Crunchy Breakfast Coffee Cake Topping:
  7. In a separate mixing bowl, add the topping ingredients and rub together to form coarse crumbs.
