The Best Healthy Banana Carrot Cake You’ll Ever Bake

1 cup of canola oil
1-1/3 cup of sugar
½ teaspoons of lemon extract
1 teaspoon of vanilla
3 cups of sifted flour
½ cups of quick oats
3 medium overripe bananas, mashed
2 medium carrots, peeled and grated
1 tablespoon of baking powder, leveled
1 teaspoon of baking soda, leveled
4 large eggs
2/3 cup of milk + 1 tablespoon of lemon juice

  1. Grease a 9-inch tube pan. In a large mixing bowl, beat the sugar, oil, mashed banana, grated carrots, vanilla, lemon extract, and the eggs in a large mixing bowl thoroughly until well combined.
  2. Mix together the milk with the lemon juice to sour it in your measuring cup. Then add the baking soda and stir through.
  3. Now add the sifted flour, baking powder and oats gradually to the sugar and oil mixture and beat until well-mixed alternating with the soured milk.
  4. Pour the batter into the tube pan and bake in a 350-degree oven for about an hour or an hour and five minutes, depending on how your oven is regulated. Test with cake tester, slender knife or toothpick to see if anything sticks when inserting it in the center of this cake for determining doneness.
  5. Allow to cool in the pan on a wire rack for at least 10 minutes before removing it.
