One of the best things about this recipe is that it’s a fantastic way to use up any overly ripe bananas you might have on hand – no more food waste! Besides, this sweet bread is wonderfully moist and tender without any added fat or salt, making it a healthier choice you can feel good about.

Fruit Bread Recipe

Ingredients

1 cup of sugar
1 large egg
1 ½ cups milk
4 cups of flour
4 teaspoons of baking powder, leveled
1 cup of walnuts, chopped
1/3 cup of candied cherry-pineapple mix
1 medium ripe banana, mashed
1 teaspoon of vanilla

Instructions

  1. Preheat your oven to 350-degrees. Grease two smaller loaf pans.
  2. Prepare the banana: Mash the ripe banana thoroughly with a hand masher or a fork until mostly smooth.
  3. Combine all ingredients: In a large bowl, simply add the mashed banana and all the remaining ingredients (sugar, egg, milk, flour, vanilla, baking powder, chopped walnuts, and candied cherry-pineapple mix). Mix well until everything is just combined. Be careful not to overmix!
  4. Fill the pans: Divide the batter evenly between your two greased loaf pans.
  5. Bake: Bake for approximately 50 minutes, or until a cake tester, slender knife, or toothpick inserted into the center comes out clean.
  6. Cool: Let the loaves cool in their pans for about five minutes before carefully removing them to a wire rack to cool completely.
  7. Later, slice and ENJOY!

Tips and Variations

Freezer-Friendly Treat: This fruit bread is also wonderful to slice and then store in the freezer! Just grab a slice whenever that sweet craving hits.

Candied Fruit Options: Feel free to get creative with your candied fruit! While I use a cherry-pineapple mix, you can also use candied cherries or candied pineapple individually.
