Slow Cooker Spanish Chicken Rice Dinner is unique with an exotic flavor influenced from two different cuisines.

  • 6 chicken thighs or legs
  • 1 can 28-oz. of petite diced tomatoes
  • 1 can 10.5 oz. of cream of mushroom soup
  • 1 tablespoon of dried basil
  • 1 teaspoon of salt
  • 1/4 teaspoon of oregano
  • ½ teaspoons of red pepper flakes
  • 3 tablespoons of sugar
  • 1 teaspoon of curry powder
  • 2 cups of uncooked regular rice
  • 1 soup can of water + 1-1/2 cups more water
  1. Rinse the chicken and place in your slow cooker.
  2. Combine the tomatoes, soup, spices, herbs, sugar and rice along with the water.
  3. Cover your slow cooker with the lid and set the temperature to low. Cook the chicken and rice dinner for about six hours.
  4. Check after a few hours if you might want to add more water for your rice. If so, pour one-half cup water and stir before closing the lid and finishing cooking.
