My Black Bean Patties are puffy gently seasoned cakes further enhanced with finely chopped onion and celery before frying in olive oil and later topping with spaghetti or pizza sauce, cheese and a dollop of sour cream.

4cupsof cookeddried black beans or 3 cans (16 oz. of canned black beans, rinsed and drained)
1small onionfinely diced
1tablespoonof Volcanic Peppers Spicy Ponzu Sauce or 1 tablespoon of soy sauce or steak sauce
1cupof finely chopped celery
olive oil to fry
3spaghetti or pizza sauceabout a tablespoon for each patty
1sliceof American cheese for each patty
grated Cheddar cheeseabout a tablespoon for each patty
Coarsely mash your cooked or drained canned beans with a fork before combining everything but the flour, cornmeal, and oil.
Shape into eight patties. Dredge each in the flour and cornmeal before cooking in enough olive oil to fry (about five minutes each side) until lightly browned. Finish cooking too further heat through or refrigerate to later reheat in the microwave.
Top with spaghetti or pizza sauce, then add a slice American cheese and a sprinkling of Cheddar cheese to melt over top.
