Black Bean Patties

My Black Bean Patties are puffy gently seasoned cakes further enhanced with finely chopped onion and celery before frying in olive oil and later topping with spaghetti or pizza sauce, cheese and a dollop of sour cream.

  • 4 cups of cooked dried black beans or 3 cans (16 oz. of canned black beans, rinsed and drained)
  • 1-1/2 cups uncooked oats
  • 1 small onion finely diced
  • 1 tablespoon of Volcanic Peppers Spicy Ponzu Sauce or 1 tablespoon of soy sauce or steak sauce
  • 1 cup of finely chopped celery
  • 3 large eggs
  • 1 teaspoon of salt
  • 1/4 cup of flour
  • 1/4 cup of cornmeal
  • olive oil to fry
  • 3 spaghetti or pizza sauce about a tablespoon for each patty
  • 1 slice of American cheese for each patty
  • grated Cheddar cheese about a tablespoon for each patty
  1. Coarsely mash your cooked or drained canned beans with a fork before combining everything but the flour, cornmeal, and oil.
  2. Shape into eight patties.  Dredge each in the flour and cornmeal before cooking in enough olive oil to fry (about five minutes each side) until lightly browned. Finish cooking too further heat through or refrigerate to later reheat in the microwave.

  3. Top with spaghetti or pizza sauce, then add a slice American cheese and a sprinkling of Cheddar cheese to melt over top.
  4. Finish each patty with a dollop of sour cream.
