Best Orange Raisin Cake

Unlike a typical raisin spice cake, this one has the help of oranges and coconut flakes adding a bright tang as well as tropical sweetness.

  • 2 cups of raisins
  • 4 cups of water
  • 1-1/2 cups of flaked coconut
  • 1 cup of canola oil
  • grated rind of three cleaned oranges or 1-1/2 teaspoons of orange extract
  • 2 teaspoons of ground cloves
  • 1 teaspoon of ground cinnamon
  • 3/4 teaspoon of ground nutmeg
  • ½ teaspoons of salt
  • 4 cups of flour
  • 1-3/4 cups of sugar
  • 2 teaspoons of baking soda leveled
  • 2 large eggs
  • your favorite confectioners’ sugar icing
  1. Add the water to the raisins and boil steadily for 10 minutes. Keep the lid on your pot to prevent the liquid from overly evaporating.
  2. Next, add oil and let the boiled mixture cool.
  3. Sift flour, sugar, soda, salt, orange rind, grated coconut flakes, and spices in your mixing bowl.
  4. Add cooled raisin mixture to the sifted dry ingredients and combine well.
  5. Now add the eggs, one at a time and mix it. (I don’t bother using my electric mixer for this, but you can this is easier for you. I just stir with my whisk to save an extra step of washing the beaters that I will need to make my creamy icing).
  6. This is a thinner batter so do not be alarmed.
  7. Grease a 13″ x 9″ pan and bake in a 350-degree oven for about 35-40 minutes, depending on how your oven is regulated. Test with a toothpick or slender knife to see if anything sticks.
  8. Frost with your favorite white icing once the cake completely cools.
