Meatless Sandwich Spread

You may think that this mix of ingredients sounds like an odd combination, but the amount of peanut butter to the beans along with these particular spices gives a wonderful flavor with a hint of nuts that may pleasantly come as a surprise.

  • 2 cups of cooked drained Great Northern beans or 1 can (15 oz. or 19 oz.)
  • 2 tablespoons of creamy peanut butter + 1 teaspoon level
  • 3 tablespoons of lemon juice fresh or reconstituted
  • ½ teaspoons of ground cumin powder
  • 1 clove of garlic finely chopped
  • 1/4 cup of olive oil
  • 1/4 teaspoon of cayenne
  • 3/4 teaspoon of salt
  1. Take out your food processor and add the cooked beans or your can of beans, peanut butter, lemon juice, cumin powder, garlic, cayenne pepper, and salt. Give the ingredients a few pulses to combine and then while your food processor is running, slowly add the olive oil to the mixture. Process the ingredients until your meatless sandwich spread is smooth.

Preparing this spread can take as little as 10 minutes if you are using canned beans over the dried beans that need to be soaked overnight.
