These delicious sugar cookies are so simple while using a minimum of ingredients that include oil and just stirring when you want great cookies in a hurry.

Ingredients
- 2 large eggs
- 2/3 cup of canola oil
- 1 teaspoon of lemon juice
- 2 teaspoons of vanilla extract
- 3/4 cup of sugar
- 3 ½ cups of flour
- 2 teaspoons of baking powder leveled
- ½ teaspoons of salt
Instructions

Beat two eggs with a fork or whisk in your mixing bowl.

Stir in the oil, vanilla and lemon juice next.

Blend in the sugar and stir into the mixture until it thickens.

Sift together: the flour, baking powder and salt.

Stir into the oil mixture and combine all the ingredients until well mixed.

Drop by teaspoons onto ungreased cookie sheets. These cookies don't really spread and puff up instead.

Bake in a 350-degree oven for about 10-12 minutes, depending on how your oven is regulated. These easy drop cookies are pale cookies, but the bottoms will be slightly browned around the edges and bottom.

Test with a cake tester or toothpick if you’re not sure to test for doneness.

Remove from the cookie sheet immediately.
