Apple Rice Pudding Recipe for a Perfect Fall Dessert

Apples are in season right now and reasonably priced. Being the case, this is the perfect time to cook and bake with them. One of my favorite ways to enjoy them is with my apple rice pudding recipe that my great-grandmother used to make. This conjures up so many delicious memories of apples and cinnamon circulating through the house and our impatience as children waiting for the pudding to come out of her oven.

Another variation that my great-grandmother would do would be to substitute cooked noodles for the rice in this recipe. Though it was still good, it just wasn’t as delectable as when it was done with rice.

My great-grandmother had the best apple tree and way with apples. We always had something with apples coming out of the oven with more apple pies, apple pudding, apple breads, apple cakes, apple strudels, and apple cookies that you could imagine. She even used to make canned apples with hot cinnamon candies that were sensational. How I miss those times and her ever since she passed, but at least I have those memories that always will remain in a special place in my heart.

I made another crock-pot version of this recipe that uses Stevia and is lower in calories. You may also want to try that one as well.

Apple Rice Pudding Recipe

4 cups of cooked rice
4 peeled, chopped apples (any variety)
3/4 cups of sugar
2 teaspoons of ground cinnamon
2 tablespoons of butter

Preheat your oven to 350-degrees.

To prepare this, you will to lightly grease a covered baking casserole or Corning dish that is about the 2 ½ quart size.

You will be dividing up the sugar, cinnamon and butter to distribute for each layer.

Put in a layer of the cooked rice and add some of the portioned sugar, cinnamon and butter before topping with some of the chopped apples.

Repeat and rotate the layers until you use all the ingredients.

Cover with your lid and place in your 350-degree oven for about an hour or until the apples are tender.

    This is not a pudding. It is rice with apples. A pudding has a creamy consistency to it.
